Description

Home made orange peels are very flavorful. Can be cut into small pieces and be used for baking.

Note

1) If possible use organic oranges. I did not get organic. So soaked the oranges in salted water for 20 minutes. Soaking for more time will make the peels salty.

Method

1) Cut off segments from oranges. Then cut them into strips. Try to keep the strips even for uniform cooking. Trim the tails of strips for a better look.
2) Boil 1 litre water. Add peels to boiling water. Boil for about 5 to 7 minutes. Drain and rinse peels.
3) Boil the remaining 1 litre water and repeat the process. This is done to remove the bitterness from peels. If after 2nd time, if the peels are still bitter repeat the process for a third time.
4) Boil 1/4 cup water. Add sugar. Let it dissolve. Now add in the orange peels. Mix well to coat the peels with sugar. On a low heat, cover and cook for 20 minutes. Occassionally check and stir the peels. After 20 minutes, cook without lid. Keep on stirring to prevent burning. It's betterv to leave a little bit of syrup in the pan, rather than burning & overcooking. At this stage peels will look translucent.
5) Take out the peels and keep on a rack to dry. Let excess syrup drip off.
6) After the peels are dried, roll in sugar.

Serving Suggestions

Can be dipped in melted chocolate and served as dessert. Cut into bits and use in baking.
