This is an ideal dessert for lactose intolerant people. For those who find it difficult to get coconut milk, can be substituted with fresh dairy cream.
1) Adjust sugar according to the sweetness of mangoes. My mangoes were not very sweet.

1 Cup | Coconut milk (thick) |
0.25 Cup | Hot water |
3 Tsp. | Gelatin |
8 Tbsp. | Sugar |
1) After removing boiling hot water from stove top, add gelatin to it. Stir to avoid lumps. Let gelatin melt.
2) Add sugat to the gelatin water and let it dissolve.
3) When gelatin mix comes to room temperature, add it to mango pulp. Blend everything together so that it is combined well.
4) Pour into dessert bowls. Cover with cling film.
5) Keep in the fridge to set. It may require around 6 hours to set.The pudding should be set to a wobbly consistency.
Serve from fridge. Can be garnished with finely chopped mangoes.
