Description

Browned butter lends a nutty flavor in preparations. It is made by melting butter so the milk solids begin to brown. As the butter is heated, it turns brown in color, providing a nutty flavor . If allowed to brown too long, it becomes dark in color and burnt in flavor. Brown Butter is also used as a sauce to add flavor to eggs, vegetables, fruits, meats, poultry and fish. Flavors like lemon juice, pepper, herbs such as parsley or cilantro.

Note

1) If butter is browned for too long it will burn giving an unpalatable, unpleasant taste.

Method

1) Heat a pan over medium heat with butter till it begins to bubble and simmer.
2) Continue cooking, stirring till butter begins to turn golden brown.
3) Then pour into a bowl, leaving the dark sediment, if any, behind.
4) Let it cool to room temperature before bottling.
