Description

Begun bhaja or fried eggplant is one of the simplest dishes one can cook. This delicious dish is crispy from outside and soft from inside. The only dis advantage with this dish is that, Aubergine or brinjal absorbs a lot of oil.
There are different varities of brinjal varying in color & shapes. Brinjals are green, violet & white. Green ones are slender. Purple ones come in 2 sizes--small & big. Some varieties of brinjal are egg shaped and hence called egg plants. Brinjals usually have a slight bitter taste. To reduce the bitterness, slice the brinjal, sprinkle salt evenly over it and mix well. Bitterness will be reduced after some water has been drained out.Rinse well after 10 minutes and use as required. It is a good source of dietary fibre.

Note

1) Use large purple brinjal for this recipe.

200  Gms.Brinjal (Egg plant)
2  Tsp.Chilli powder
3  Tsp.Tumeric powder
  Salt to taste
2  Tsp.Garam masala powder
1  Tbsp.Lime juice
3  Tbsp.Rice flour
8  Tbsp.Mustard oil

Method

1) Cut brinjals into fairly thick roundels. Apply salt and turmeric powder and keep aside for 30 minutes. This helps to remove bitterness of aubergine and drains out excess water.
2) Mix chilli powder, little salt, garam masala powder lime juice and rice flour.
3) Coat each brinjal slice with the masala rice flour mix. Dust off excess.
4) Heat little oil at a time in a flat pan. Pan fry brinjal slices on medium heat till crisp and golden brown. Drain on paper napkins.

Serving Suggestions

Serve immediately after frying. Can be served with yoghurt or with lime wedges.
