Description

Pico de gallo, is also called salsa fresca or Salsa Mexicana. It is a fresh, salad made from chopped tomato, onion, coriander leaves, fresh serranos chillies (typical to Mexico), salt, and lime juice. Translated to English Pico De galo means "rooster's beak".

Note

1) Traditionally Serrano peppers, which are native to Mexico is used. It can be substituted with normal chillies.
2) Add salt to the salad only just before serving. Or it will be watery.
3) White onions are less piquant than the red / violet ones. If you cannot find white substitute with normal red onions.
4) Use the best tomatoes, which are red, but firm

2  Tbsp.Onion
0.5  Tsp.Green chillies finely chopped
1  Tsp.Corriander leaves chopped fine
  Salt to taste
1  Tsp.Lime juice

Method

1) Deseed and chop tomatoes.
2) Chop onions.
3) Mix both onion, chillies and tomato together. To this add lime juice.
4) Garnish with corriander leaves. Keep in the fridge to chill for about 15 minutes.
5) Add salt only just before serving.

Serving Suggestions

Served with Tortilla chips and Quesadillas.
