Description

Cheesecake is a dessert consisting of a mixture of soft, fresh cheese (not always cream cheese), eggs, and sugar; often on a crust or base made from hard biscuits It may be baked or unbaked. Cheesecake is usually sweetened with sugar and may be flavored or topped with fruit or fruit sauce or chocolate. Various flavours of cheesecake exist, such as lemon, strawberry etc.
This is a no bake cheese cake.Hence does not contain eggs or flour . This also eliminates all the problems normally associated with cheesecakes, like over baking etc.
Cheese cake is made in a flan or pie tin. A flan or pie tin can have both fluted or plain sides and can be made of metal, glass or ceramic. The metal tins are usually with loose bottom, so the pie can be removed easily.

Note

1) Usually ready made cream cheese or Philadelphia cream cheese is used for making cheese cake, but as this is not easlily available , we can substitute with paneer. Process paneer in a blender to make it smooth, before adding other ingredients.
2) You can use non diary whipping cream or full fat cream with atleast 40% fat. Whip cream to stand in peaks before adding to the filling. The usual fresh cream available here is has very little fat content & hence cannot be whipped. I used non dairy whipping cream.

1.5  Tbsp.Lemon juice
200  Gm.sWhipped cream
1  Tsp.Lemon rind finely grated
0.5  CupPowdered sugar

Method

1) Process biscuit with cooled melted butter in a food processor or blender. This would look like slightly wet sand.Press this mixture into the base of a flan ring which measures 7 inch in diameter.
2) Keep in the fridge to chill for an hour and half. Let it chill until firm.
3) Mix cream cheese/ paneer with whipped cream, lemon juice, lemon rind & sugar and beat well to form a silky smooth mix.Spread this filling over the biscuit base. Keep to chill in the fridge for 2 hours.
4) When firm to touch, remove from fridge and take the cake out of the tin (in case of loose bottom tin,remove the outer rim of the tin) or else cut and take out the wedges of cake. Cut into wedges and serve.

Serving Suggestions

Can be served with fruit sauces or as it is.
