Description

These are the perfect, crisp ladies fingers flavored with carom seeds that you will crave for on any rainy day.
Carom belongs to the cumin and parsley family, carom seeds are tiny, oval-shaped with a sharp and penetrating taste. It has been used since ancient times for its aromatic and medicinal properties. Carom seeds are mostly used in whole form, and very rarely as a powder. because of its strong aroma it is used in very small quantities. It is used in Indian fried snacks as it aids digestion. Being a good digestive, it added to the buttermilk served after a meal or eaten in dry roasted form.
One ingredient that gives zing to snacks, tandoori dishes etc. is chaat masala. Chaat masala is a spice blend consisting of black salt, chilli powder, cumin seeds and dry mango powder. There are as many recipes for chaat masala as there are households in India. Chaat masala is available in supermarkets.

Note

1) Mix all the ingredients to the bhindi at the time of frying as the salt added releases moisture which can make the final product soggy.
2) Put the oil to get hot. In the meanwhile cut half of the ladies fingers first and sprinkle half of all the other ingredients and fry first batch. While the first batch is being fried, cut the left over fingers & add masala. Then fry.

0.5  Tsp.Carom seeds
0.25  Tsp.Turmeric
2  Tsp.Chaat masala
4  Tbsp.Gram flour
  To TasteSalt
1  Tsp.Lemon juice
1  Tsp.Chilli powder

Method

1) Wash and pat dry bhindi. Cut the head and slit the bhindi into four lengthwise. Place in a shallow bowl .
2) Heat oil for frying.
3) Sprinkle carom seeds, turmeric, chaat masala, chilli powder, gram flour and salt on the ladies fingers.
4) Sprinkle lemon juice and toss well to coat the ladies fingers.
5) Add half of the ladies fingers to hot oil and fry in 2 batches till crisp. Drain on paper napkins.

Serve hot.
